Terns at Cumberland Island

When we went to Cumberland Island Ga we made our way across the dunes, the sweltering marsh and through the Dungeness mansion...all to get to the beach. When we got there it was no disappointment. My question is how do u set up ur camera as far as ur AF, eventhough u may be shooting with flash at all time are u metering off the persons face or the environment.
